I've been attempting to create a quarry terrain and have had little success. The part that really has me stumped is the "shale" look of the canyon walls, I have no idea how to pull that off. Has anyone done anything similar to this, or do you have any suggestions?

A mix of small scale strata shaders, each masked by small scale PF, can do a lot, I'd say.
This blocky, "flaky" look is a bit challenging, but there have been some good discussion threads and file shares in the last 6 months or so. I think if you search for "square" or other words/phrases related to this kind of shape in the forums you might find some of that.
