Have you tried searching for posts about mesa's? There's a lot of 'hidden' info to be found.

You can easily do it by creating a fractal shader (should have been "terrain", duh :P) or generating a heightfield. Then, apply strata and outcrops shader. Finally, mask the area where you would like to have a mesa with the simple shape shader. Make sure to check the smooth step option in the color tab, setting color edge width to around 35% (or whatever works best for you) to avoid nasty, vertical walls. It should be plugged into the terrain mask socket. This should give you something to start with that you may later tweak or just leave if you think it's okay enough for you.

You can also check out this thread, but it creates a sort of "planetwide" mesa. A clever idea though if you ask me:

Correct, there has been some recent updates to this particular topic, "search and you will find the grail" ;)
